Preheat oven to 300 F.
Pulse macapan, sugar and salt in a food processor until the ingredients smoothly combine. (Alternatively, you may use a mixer to combine the ingredients.) Add egg whites and mix or puree until smooth.
Transfer batter to a pastry bag fitted with a ⅜" tip and pipe ¾" rounds about 1 inch apart onto parchment lined baking sheets.
Bake, rotating halfway through, until golden and puffed, 18-20 minutes.
Cool completely before trying to remove from pan.
Cookies can be stored at room temp for two days and frozen for up to a month.
